Tapping 2012

Today marks the first day of our Maple Syrup tradition for 2012 here at Russwood! We’re not sure what to expect as far as sap quality or quantity this year, as this Winter (if you can call it that) has been quite weird with its mild temperatures and its uncertain patterns. So we decided to stick with our old custom of tapping the trees now that March has arrived. Making Maple Syrup has been a great family tradition here for as long as I remember (and long before that…) I have fond memories of spending my March break alongside my Nan and Papa in the woods, boiling sap and making delicious syrup the old way. We’re so excited to continue and share this great Canadian custom with out friends and family! Here’s to a great 2012 season 🙂
